"The Best Dressed" Caesar and No Anchovy Caesar are light, non-creamy dressings prepared like those made tableside in fine restaurants. In addition to salads, these Caesars provides a tasty sauce for hot pasta instead of tomato sauce. Be sure to toss in some of your favourite vegetables.
INGREDIENTS: A special blend of Canola oil, grated Parmesan cheese product (milk products, Parmesan, bacterial culture, salt, microbial enzyme, lipase), red wine vinegar (naturally-occuring sulphites), fresh garlic, anchovies, pure lemon juice, salt, mustard, Worcestershire sauce, spices and seasonings. NOTE: The No Anchovy Caesar contains all the above excluding the anchovies and Worcestershire sauce.
TRADITIONAL CAESAR SALAD (pictured above)
Wash and dry Romaine lettuce. Tear or cut into approximately 1" pieces crosswise. Place in bowl (preferrably wood) and add croutons. Being sure to shake "The Best Dressed" Caesar (with or without anchovies) very well, pour desired amount over salad and toss. Prepare just before serving and, if you wish, sprinkle some freshly-grated Parmesan on top to garnish.
Note: I usually calculate one large head of Romaine to serve 4-5 people as a side dish.
CHICKEN OR SHRIMP CAESAR SALAD
Using cooked boneless chicken or shrimp, cut into bite-size pieces. Prepare Caesar salad as above. Mix chicken or shrimp through salad, saving enough to garnish top of salad for serving.
"The Best Dressed" Caesar may be used as a marinade. For poultry or meat, allow approximately 3-4 hours refrigerated. For fish, allow approximately 1 hour refrigerated. NEVER re-use dressings or marinades for another purpose after marinating!
"The Best Dressed" Caesar is a delicious alternative to the traditional sauces used on pasta, hot or cold. Instead of using pesto, tomato or creamy sauces the next time you serve pasta, try "The Best Dressed" Caesar. Be sure to drain the pasta, put in your choice of grilled vegetables (i.e. peppers, onion, zucchini, snow peas, etc.) and add desired amount of dressing to ensure full coverage and mix well.
CAESAR GARLIC BREAD
Using a long crusty bread (French stick, etc.), cut the bread on the diagonal about 1" thick and place on baking sheet which I line with foil paper for easy clean-up or you can use a coated baking sheet, if you prefer. Using a spoon or small ladle, mix "The Best Dressed" Caesar well and spoon enough on to each slice of bread to cover the entire surface (up side only). Place under broiler (about 4-6 inches from element)and broil until browned to your liking. Be sure to watch carefully as, with any garlic bread, it will burn quickly. Serve immediately.
KEVINS BRUSSEL SPROUTS (ingredient quantities - your choice)
